BLT with Avocado and Basil Aioli
The BLT is my go to sandwich and i just made this delicious one.
Ingredients:
• 4 slices thick-cut bacon
• 2 slices sourdough or ciabatta bread (toasted)
• 1 cup mixed greens or arugula
• 1 medium heirloom tomato, sliced
• 1/2 avocado, sliced
• 1 tbsp butter (optional for toasting bread)
For the Basil Aioli:
• 1/4 cup mayonnaise
• 1 small garlic clove, minced
• 1 tbsp fresh basil, finely chopped
• 1 tsp lemon juice
• Salt and pepper to taste
Instructions:
1. Cook the Bacon:
• Fry the bacon in a skillet over medium heat until crispy. Drain on paper towels.
2. Make the Basil Aioli:
• In a small bowl, mix the mayonnaise, minced garlic, chopped basil, lemon juice, and a pinch of salt and pepper. Set aside.
3. Toast the Bread:
• Toast the sourdough or ciabatta slices to your desired crispness. You can butter the bread lightly before toasting for extra flavor.
4. Assemble the BLT:
• Spread a generous amount of basil aioli on each slice of toasted bread.
• Layer the arugula or mixed greens, tomato slices, bacon, and avocado.
• Top with the second slice of bread.
5. Optional Upgrade:
• Add a fried egg or some fresh mozzarella for extra richness.
6. Serve and Enjoy:
• Slice the sandwich in half, serve with a side of sweet potato fries or a simple salad, and enjoy this elevated twist on the classic BLT!
