I used to think it was a complicated dish best left to restaurants, but after a few tries, I've perfected a recipe that's become a family favorite. It’s perfect for a satisfying weeknight dinner or a fun weekend meal prep. The secret to amazing chicken gyros starts with the marinade. I always use boneless, skinless chicken thighs because they stay juicy and tender. For the marinade, I combine olive oil, fresh lemon juice, minced garlic, dried oregano, a pinch of cumin, salt, and black pepper. Let the chicken soak up all those fantastic flavors for at least 30 minutes, or even better, overnight in the fridge. This step is non-negotiable for that classic gyros taste! Once your chicken is marinated, you have a few options for cooking. I personally love grilling it for that smoky char, but pan-frying in a cast-iron skillet or even baking it in the oven works wonderfully too. Just make sure the chicken is cooked through and has a nice golden-brown crust. Slice it thinly after cooking – this makes it easier to pile into your pita bread! No chicken gyros are complete without a creamy, refreshing tzatziki sauce. It’s surprisingly simple to make from scratch. I grate some cucumber, squeeze out the excess water, and then mix it with plain Greek yogurt, minced garlic, fresh dill, a splash of white vinegar or lemon juice, and a dash of salt and pepper.
