Let it rest for about 20 to 30 minutes; this resting period — also known as the bench rest — relaxes the gluten, making the final shaping easier and more effective. After the bench rest, the dough is ready for the final shaping where you will create the tension needed for the perfect loaf. For round loaves (boules), gently stretch the dough surface by pulling it towards the bottom while rotating it. For elongated shapes (batards), flatten the dough slightly and roll it into a tight cylinder. Pre-shaping also helps regulate the gas retention within the dough contributed by the sourdough starter’s active wild yeast and bacteria. This is why a well-maintained sourdough starter is essential for successful bread baking.
