Your perfect fall side dish

Butter swim biscuits gotta be my favorite kind of quick bread to make at the moment. It’s delicious and easily customizable as you can make it to dessert if you want to. I plan on making lemon blueberry butter swim biscuits eventually but for now enjoy this perfect fall dish. Ps: I kind of regret not adding cheddar cheese you absolutely should if you’re a cheese gal like me :)

instructions:

Preheat oven to 450 degrees.

Combine dry ingredients in a medium sized bowl.

Add buttermilk and mix ingredients together until a moist/sticky dough is formed.

Melt butter in a microwave safe bowl, and then pour it into an oven safe baking dish or a heavy bottomed skillet.

Place dough on top of the melted butter and use a spatula to spread it evenly across the pan until it touches the sides

Cut the unbaked dough (it should be swimming in butter at this point) into squares.

Bake for 20-25 minutes or until golden brown on top.

Mix more melted butter and parsley and add on top

... Read moreWhen I think of a 'cowboy biscuit recipe,' I picture something hearty, comforting, and straightforward – and these butter swim biscuits absolutely fit the bill! There’s just something so satisfying about a rustic bread dish that comes together with minimal fuss but delivers maximum flavor. I've found they're perfect for those chilly evenings when you want a warm, homemade touch to your meal. One of the best things about this 'bread dish' is how versatile it is. While the recipe is fantastic as is, don't be afraid to experiment! The original recipe mentions cheddar, which is a game-changer for a savory biscuit. But have you ever tried adding a sprinkle of caramelized onion butter seasoning into the dry mix? It adds such a deep, umami flavor that really elevates them. I also love to throw in some chopped chives or a pinch of garlic powder for an extra savory kick. For those who enjoy a bit of heat, a tiny bit of cayenne pepper can be a surprisingly delicious addition! Speaking of serving, these aren't just any side! They're a truly versatile 'bread dish' that pairs beautifully with so many meals. I recently served mine with a rich coconut braised oxtail and some creamy mashed potatoes, just like in that amazing meal I snapped a pic of, and it was an absolute hit. The biscuits were perfect for soaking up all the delicious sauce. They’re also incredible alongside a hearty chili, a comforting stew, or even just with some scrambled eggs for a weekend brunch. For a lighter touch, I sometimes enjoy them with a fresh salad and some grilled chicken. They really do make any meal feel a little more special and complete. To make sure your butter swim biscuits come out perfectly golden-brown and fluffy every time, here’s a tip I swear by: make sure your buttermilk is at room temperature. It helps activate the baking powder better, leading to a lighter texture. And don't overmix the dough! A moist, slightly sticky dough is exactly what you want. When spreading it into the pan, be gentle. You want it to 'swim' in that butter, which gives it that incredible crispy bottom and soft interior. The 'quick and easy' label really is true – these are foolproof once you get the hang of it! And for those with a sweet tooth, remember you can absolutely turn these into a dessert 'bread dish'! Instead of savory additions, try adding a tablespoon of sugar to the dry ingredients, along with some lemon zest and dried cranberries. Drizzle with a simple lemon glaze after baking for a delightful treat. I’m planning a lemon blueberry version soon, and I can't wait to share that too!
