Spring Pea Side Dish

This easy side dish is a perfect recipe for the upcoming Easter holiday! This recipe may seem too easy, but it really is this simple! Plus, everyone loves the slightly sweet flavor of peas, so you know you’re going to love them!

INGREDIENTS

- 6 cups fresh or frozen peas

- 3 tbsp olive oil

- 1/4 cup diced onion

- 1 tsp kosher salt

- 1/2 tsp black pepper

- 2 tsp Dijon mustard

- 2 tsp honey

- 1 tbsp minced fresh herbs

- 2 tbsp lemon juice

INSTRUCTIONS

1. In a large skillet, heat oil over medium.

2. Add onion, salt, and pepper and sauté until softened, 3-5 minutes.

3. Add the mustard and honey, mixing to dissolve the honey. Add the lemon juice. Whisk to combine.

4. Add the peas and stir until warmed through, 3-5 minutes.

5. Garnish with minced fresh herbs and serve.

They’re packed with vitamins K, A, and C, and a good source of fiber and protein. So, when I’m serving this, I feel good knowing I’m adding something healthy and tasty to our meal. It's a win-win! When it comes to choosing peas, I usually grab a bag of frozen peas. They're super convenient and are typically flash-frozen at their peak ripeness, locking in all that goodness. But if it’s spring and I can find fresh, sweet peas at the farmer’s market, I go for those! They have an unbeatable texture and flavor. Just remember to blanch fresh peas quickly before adding them to the skillet to retain their bright green color and tender-crisp bite. While the original recipe is absolutely perfect, I’ve found myself experimenting with it a bit, depending on what I’m serving or what I have on hand.
