Taiwanese Popcorn Chicken🇹🇼 | Airfryer Recipe😋
The key to getting it crispy in the air-fryer is using the correct potato starch!! The coarse one is best for the air-fryer and the regular one works better for deep-frying!🤫🤫
✎ Ingredients:
* 1 lb chicken thighs
* 1/2-1 tbsp soy sauce
* 2 tsp shaoxing wine
* 1 tsp white pepper powder
* 1/2 tsp five spice powde
* 1/2 tsp sugar
* 1 tbsp minced garlic
* 2 tsp grated ginger
* 1 egg white
* Thai basil
* coarse potato starch
* cooking oil spray
✎ Seasonings to Sprinkle on
* cayenne pepper
* chili powder
* white pepper
Directions:
1. Cut chicken thighs into bite size pieces.
2. Marinate chicken with soy sauce, shaoxing wine, white pepper, five spice, sugar, minced garlic, grated ginger, and egg white for a minimum of 30 mins in the fridge. The longer the better.
3. Coat each piece in coarse potato starch. Spray with cooking oil. Arrange chicken in a single layer, do not overcrowd.
4. Preheat air-fryer and air-fry at 375F for 5-6 mins on each side.
5. Spray basil leaves with cooking oil and air-fry at 375F for 2-3 mins OR you can also air-fry basil the last 2 mins with the chicken.
6. Sprinkle a dash of cayenne pepper and white pepper and mix. Just like how you would sprinkle them on when you order popcorn chicken at boba shops!
Comes out so crispy and less oily!😋

Okay, so you've got the basic recipe down, and I bet your Taiwanese Popcorn Chicken is already tasting amazing and super crispy thanks to the air fryer! But I wanted to share a few more of my personal tips and tricks that really elevate this dish and answer some questions I often get. First, let's talk more about that potato starch. It's truly the MVP for getting that signature craggly, light-but-crispy coating we all love. When I first started making air-fryer chicken, I tried all sorts of flours, but nothing compared to coarse potato starch. Regular potato starch works okay for deep-frying, creating a smoother, crispier crust, but for the air fryer, the coarse texture creates more surface area for that incredible crunch without needing excess oil. I usually find it in Asian supermarkets, and while prices can vary, a good bag usually costs around $3-5 and lasts for ages. It’s worth the small investment for perfectly crispy popcorn chicken air fryer style! Next up, the marinade recipe. This isn't just about flavor; it's also about tenderizing the chicken and ensuring that the starch sticks well. The soy sauce brings that essential umami and savory depth, while the Shaoxing wine adds a unique aromatic complexity – don't skip it if you can help it! White pepper and five-spice powder are classic Taiwanese flavors, giving it that authentic taste. And the egg white? It's a game-changer! It helps bind the starch to the chicken, creating a better crust, and it also contributes to a slightly softer, more tender chicken. I find that marinating for at least an hour really makes a difference, but if you can do it overnight, even better. The chicken soaks up all those amazing flavors, making every bite incredibly juicy. Now, for achieving maximum crispy perfection in your air-fryer. My number one tip, beyond the coarse potato starch, is to not overcrowd the air fryer basket. This is crucial! If you pile the chicken pieces on top of each other, they'll steam instead of fry, and you'll end up with soggy chicken. Work in batches if you need to. Also, don't skimp on the oil spray! A good, even coating helps achieve that golden-brown crispiness. I like to flip them halfway through and give them another quick spray. If you want extra crispiness, sometimes I'll air-fry them for the recommended time, then let them rest for 5 minutes, and then give them another 2-3 minutes at a slightly higher temperature (like 400F). This double-fry method can create an even crunchier exterior, just like potato starch fried chicken should be! Lastly, for those curious about other variations, while this recipe is pure Taiwanese Popcorn Chicken, I've also dabbled in Korean popcorn chicken airfryer recipes. They often use gochujang and a sweeter glaze, which is delicious in its own right, but for that authentic savory, five-spice flavor, nothing beats this Taiwanese version. Play around with the seasonings you sprinkle on at the end – a little extra white pepper, a dash of chili powder, or even some seaweed flakes can add a fun twist. Happy air-frying!
