Onigirazu, often called a sushi sandwich, is a wonderful alternative to traditional sushi rolls. What I love about this recipe is its versatility and speed—I can whip it up in about 15 minutes, making it perfect for busy weekdays or a casual lunch. Using Kvaroy Arctic Atlantic salmon adds not only great flavor but also a commitment to sustainability, which makes me feel good about what I’m eating. The breaded and fried salmon adds a crispy texture that pairs perfectly with the soft, sticky rice and crunchy fresh vegetables like cucumber, carrot, and lettuce. The yellow pickled radish adds a slight tang and crunch that brightens each bite. One tip I found helpful is to lightly wet the nori seaweed edges before folding to prevent cracking and help the corners stick together neatly. This step makes wrapping much easier and the onigirazu stays tightly packed. I usually keep sriracha mayo on hand because it adds a creamy heat that livens up the sandwich. However, you can customize the sauce to your taste—try a wasabi mayo or even soy sauce with a squeeze of lime. This dish is also great for experimenting with fillings. If you don’t have salmon, you can substitute with cooked shrimp, tempeh, or even grilled vegetables. It's a creative way to use up whatever you have in your fridge. Overall, this salmon onigirazu brings together a balance of flavors and textures, making it a satisfying and delicious meal that's easy to prepare. Whether you’re a sushi lover or new to Japanese cuisine, give this recipe a try—it’s a fun and tasty way to enjoy sushi at home without the fuss of rolling.
