1 lb Italian sausage (casings removed)

1 large onion, chopped

4 garlic cloves, minced

10 oz frozen spinach (thawed and squeezed dry) 🥬

2 tbsp olive oil

4 tbsp unsalted butter

¼ cup all-purpose flour

3 cups whole milk

1 cup chicken broth 🍲

1 cup heavy cream

1 cup grated Parmesan cheese 🧀

1 cup shredded mozzarella cheese 🧀

2 tbsp Cajun seasoning

1 tbsp Italian seasoning

1 tsp smoked paprika

Salt & black pepper, to taste

Optional garnishes: extra Parmesan & chopped parsley 🌿

1️⃣ Cook Pasta

Boil linguine in salted water until al dente (about 10–11 min). Reserve ½ cup pasta water, then drain.

2️⃣ Brown the Meats

Heat olive oil in a large skillet over medium-high. Cook ground beef and sausage, breaking it up, until fully browned. Remove excess grease if needed.

3️⃣ Sauté Onion & Spinach

Add onion; cook ~5 min till softened. Stir in garlic and cook 1 min. Add drained spinach and cook another 2–3 min until heated.

4️⃣ Make the Creamy Sauce

In a separate saucepan, melt butter over medium. Whisk in flour and cook 1 min. Slowly whisk in milk and chicken broth until sauce thickens (~5–7 min).

5️⃣ Cheese & Spices

Lower heat and stir in cream, Parmesan, mozzarella, Cajun seasoning, Italian seasoning, smoked paprika, salt, and pepper until smooth and melty.

6️⃣ Combine Everything
