Spring Lemon Garlic Shrimp & Asparagus Pasta

🛒 Ingredients (Serves 3–4)

• 8 oz linguine or spaghetti

• 1 lb large shrimp (peeled & deveined)

• 1 bunch fresh asparagus (cut into 2-inch pieces)

• 3 cloves garlic (minced)

• 2 tbsp butter

• 2 tbsp olive oil

• 1 lemon (zest + juice)

• ½ cup grated Parmesan cheese

• ¼ cup pasta water

• 2 tbsp fresh parsley (chopped)

• Salt & black pepper to taste

• Optional: red pepper flakes

👨‍🍳 Instructions

1️⃣ Cook the Pasta

Boil pasta in salted water according to package directions.

Reserve ¼ cup pasta water, then drain.

2️⃣ Sauté the Asparagus

Heat 1 tbsp olive oil in a skillet over medium heat.

Cook asparagus 3–4 minutes until bright green and slightly tender.

Remove and set aside.

3️⃣ Cook the Shrimp

In the same pan add:

• butter

• remaining olive oil

• garlic

Cook until fragrant.

Add shrimp and cook 1–2 minutes per side until pink.

4️⃣ Build the Sauce

Add:

• lemon zest

• lemon juice

• pasta water

• Parmesan

Stir until creamy and slightly thickened.

5️⃣ Combine Everything

Add pasta and asparagus back to the pan.

Toss everything together until coated in the lemon garlic sauce.

Finish with parsley and extra Parmesan.

🍽️ Serving Tip
