🧄🍋 Creamy Lemon Garlic Pasta w/ Crispy Chicken
Ingredients
For the Chicken
• 2 chicken cutlets (or breasts, sliced)
• Salt & pepper
• ½ cup flour
• 2 eggs, beaten
• ¾ cup seasoned breadcrumbs (or panko)
• ¼ cup grated parmesan
• Olive oil or butter for frying
For the Pasta
• 8 oz fettuccine or linguine
• 2 tbsp butter
• 4 cloves garlic, minced
• 1 cup heavy cream
• ½ cup freshly grated parmesan
• Zest of 1 lemon
• Juice of ½–1 lemon (to taste)
• Salt & black pepper
• Red pepper flakes (optional)
• Fresh parsley for garnish
✨ Instructions
1. Cook pasta in salted water until al dente. Reserve ½ cup pasta water.
2. Bread the chicken:
Dredge in flour → egg → breadcrumb + parmesan mixture.
3. Pan-fry chicken in olive oil or butter over medium heat until golden and crispy. Set aside and slice.
4. Make the sauce:
In the same pan, melt butter and sauté garlic until fragrant.
Add cream, parmesan, lemon zest, and lemon juice. Simmer until creamy.
5. Combine:
Add pasta to sauce, tossing gently. Use pasta water if needed.
6. Serve:
Top with crispy chicken, extra parmesan, parsley, and lemon zest.
