12 oz (≈ 340 g) penne or gluten-free pasta
2 Tbsp butter
2 Tbsp minced shallots
2 Tbsp minced garlic
½ cup (≈ 80 g) sun-dried tomatoes, diced
2½ Tbsp tomato paste
2 cups vegetable broth
1 cup heavy cream
1 cup Parmesan cheese, shredded
2 cups fresh chopped spinach
Fresh basil, chopped (for garnish)
