🛒 Ingredients
4 russet potatoes (about 1½ lbs), scrubbed clean
5 tbsp unsalted butter, cubed
1 small shallot, diced
¼ cup all-purpose flour
3 cups milk (whole or 2%)
1 cup chicken stock (or vegetable stock)
½ cup sour cream
Salt and pepper, to taste
Toppings:
2 cups shredded cheddar cheese
4 strips crispy cooked bacon, crumbled
1 tbsp sliced chives (or green onions)
½ cup crispy onions or shallots (optional)

👩🍳 Instructions
1️⃣ Preheat oven to 350 °F. Prick potatoes all over with a fork and place directly on the oven rack. Bake until fork-tender (~1 hour 15 minutes). Remove potatoes, cool slightly, peel and dice them.
2️⃣ In a large pot over medium heat, melt the butter. Add diced shallot and sauté until soft (~2-3 minutes). Season lightly with salt and pepper.
3️⃣ Sprinkle flour over the shallots and butter, stirring constantly for 3-4 minutes to cook out the raw flour taste.
4️⃣ Gradually pour in the milk and chicken stock, whisking until smooth. Simmer gently until the mixture thickens slightly — avoid boiling.
5️⃣ Stir in the diced baked potatoes, then blend the soup until smooth (either in batches in a blender or with an immersion blender).
6️⃣ Return soup to the pot, stir in sour cream, and adjust seasoning with salt and pepper. If too thick, add a splash more milk.
7️⃣ Ladle soup into bowls and top with shredded cheddar, crumbled bacon, chives, and crispy onions for garnish.
