s’mores bars (easy summer dessert) 🍫☀️
Sharing 5 of my all time favorite recipes!
Ep # 4: S’mores Bars 🍫☀️
- 3 tablespoons unsalted butter
- 10 oz bag of mini marshmallows
- 6 cups golden graham cereal
- 1 cup semi sweet chocolate chips
- Splash of heavy cream
- Salt (flaky or kosher)
Directions:
1. In a pot, melt the butter over medium low heat. Add all, but 1 cup of the marshmallows. Mix well.
2. Add the cereal and mix until fully coated. Work quickly and transfer the mixture in a 9x9 parchment lined baking tray.
3. Top off with the remaining marshmallows. Broil for 2 to 5 minutes or until golden brown. Careful to not let it burn!
⭐️ This is optional, but I like to use a kitchen torch on the marshmallows after broiling to get more of that smokey flavor.
4. Combine the chocolate and heavy cream to make the ganache. Drizzle as much as needed.
5. Finish with a sprinkle of salt. Refrigerate for 5 minutes or until the ganache hardens. Cut up into squares and serve immediately. Enjoy!

You know that feeling of sitting by a campfire, roasting marshmallows, and making the perfect s'more? Well, I'm here to tell you, you can get all that deliciousness right in your kitchen with S'mores Bars! My recipe is already super easy, but I've picked up a few extra tips and tricks over the years that truly elevate these bars from good to absolutely divine. If you're looking to really impress, or just make the best batch for yourself, keep reading! **Making Them Extra Perfect: My Secret Tips! Choosing the right marshmallows makes a difference. While mini marshmallows are perfect for mixing in (these are the key ingredients!), don't be shy about using a few larger ones for the topping – they get that beautiful, stretchy pull. And when it comes to broiling or using a kitchen torch (my absolute favorite step!), keep a very close eye! They can go from golden to burnt in seconds. That smoky, caramelized top is what we're after, not a black crisp! The chocolate ganache isn't just for looks; it adds an incredible layer of rich flavor. A splash of heavy cream is key for that silky smooth texture. Don't overheat it, just melt until smooth. You can even experiment with different chocolate types – a mix of semi-sweet and a little dark chocolate can be divine. And that sprinkle of flaky sea salt? Non-negotiable! It cuts through the sweetness and enhances every single flavor. Beyond the Basics: Fun Variations to Try Once you've mastered the classic S'mores Bar (which is an easy summer dessert, by the way!), why not get creative? I love trying new twists! Nutty Perfection: Fold in some chopped toasted pecans or walnuts with your chocolate chips for an extra crunch. Peanut Butter Dream: Swap out half the semi-sweet chocolate for peanut butter chips in your ganache, or even swirl in a dollop of creamy peanut butter into the marshmallow mixture. Spice It Up: A tiny pinch of cinnamon or even a whisper of cayenne pepper (seriously!) can add an unexpected warmth and depth to the chocolate. Different Bases: While Golden Grahams are classic, you could experiment with other crushed cereals like Honey Nut Cheerios or even a mixture of crushed graham crackers directly into the base for a more traditional s'mores feel. Serving Up & Storing Your Sweet Treats** These bars are best served at room temperature, but a short chill helps them set perfectly for cutting. To get those clean, beautiful squares, use a sharp knife warmed under hot water and wipe it clean between each cut. Trust me, it makes a huge difference! If by some miracle you have leftovers (it rarely happens in my house!), store them in an airtight container at room temperature for up to 3 days. If you want them to last longer, popping them in the fridge can extend their life, but they might lose a bit of their gooey texture. A quick zap in the microwave for 10-15 seconds can bring back some of that melty goodness! Whether you're making them for a backyard BBQ, a cozy movie night, or just because, these S'mores Bars are truly the ultimate easy summer dessert. They bring all the joy of a campfire right into your home, and with these extra tips, yours are going to be unforgettable. Happy baking!
