Ingredients

Rice Layer

* 2 cups cooked sticky sushi rice

* 1–2 tbsp sushi seasoning (mixed into warm rice)

Crab Mixture

* 2 packages imitation crab, chopped or shredded

* ½ cup Kewpie mayonnaise

* 1–2 tbsp sriracha (adjust to taste)

Toppings

* 2 Persian cucumbers, diced

* 4–5 green onions, sliced

* 1 jalapeño, finely diced

* Eel sauce, for drizzling

* Sesame seeds, for garnish

Instructions

1. Mix the warm sticky rice with the sushi seasoning and press it into the bottom of a baking dish.

2. In a bowl, combine the imitation crab, Kewpie mayo, and sriracha until creamy. Spread evenly over the rice.

3. Top with the diced cucumber, sliced green onions, and jalapeño.
