Zuppa Toscana
✨ Homemade Zuppa Toscana Soup ✨
Creamy, comforting, and packed with flavor — just like the restaurant favorite, but better at home!
Ingredients
• 1 lb sausage (mild or spicy)
• 4–5 slices bacon, chopped
• 1 small onion, diced
• 3–4 cloves garlic, minced
• 4 cups chicken broth
• 3–4 russet potatoes, sliced thin (or diced)
• 1 cup heavy cream
• 2 cups fresh kale, chopped (stems removed)
• 1 tsp salt (adjust to taste)
• ½ tsp black pepper
• ½–1 tsp red pepper flakes (optional, for heat)
• Olive oil (if needed)
👩🍳 Instructions
1. In a large pot, cook the bacon over medium heat until crispy. Remove and set aside, leaving the grease in the pot.
2. Add the sausage and cook until browned. Break it up as it cooks. Remove excess grease if needed.
3. Add diced onion and cook 3-4 minutes until soft. Stir in garlic and cook for 30 seconds until fragrant.
4. Pour in chicken broth and add potatoes. Bring to a boil, then reduce heat and simmer 10-15 minutes, or until potatoes are fork-tender.
5. Stir in heavy cream, kale, salt, pepper, and red pepper flakes.
6. Simmer another 5 minutes until kale is wilted and flavors are blended.
7. Top with crispy bacon and serve hot!
