Lemon curd on a healthy flapjack type base🍋

Ingredients for base

10 bananas

7 tbsp honey

2 tbsp ground cinnamon

70g butter, melted

300-400g oats

1-2 tbsp salt

Ingredients for curd

4 tbsp unsalted butter, cubed

1/3 cup honey

4 large egg yolks

2 large eggs

1 tbsp finely grated lemon zest

2/3 cup fresh lemon juice

-YOU CAN MAKE BOTH OF THESE AS 2 SEPARATE DESSERTS OR YOU CAN PUT THEN TOGETHER.

Method for base (start with the base)

Cook on 180

Peel and mush 2 bananas in a bowl, then add the honey and mix.

Then add melted butter, oats and ground cinnamon then mix.

Line a baking tray/tin/dish and then place the mixture inside, flattening down with the back of a spoon, making sure the thickness is around 1cm thick

Cook for 10-15 mins and then check if done.

Method for curd

In a medium bowl, combine the butter & honey. Start low and work up, cream together until fluffy. I used a hand whisk.

While beating the mixture, slowly add the egg yolks & eggs. Then add the lemon zest & lemon juice to the bowl and blend. It may look curdled but it’s fine.

Pour the mixture into a medium sized pan, cook over medium to low heat, stirring continuously, could take between 10-20 mins.

Once the mixture looks mouth and shiny, slowly increase the heat to medium. Continue cooking until the mixture has thickened and your spoon meets a resistance when stirring.

Once the mixture tried to boil, cook for 25 seconds and then remove from heat. The curd will thicken once cooled down.

Don’t remove from the pan until cooled, can be stored in the fridge for up to 1 week or freezer for up to 2 months

Once cooled add the curd to the flapjack top and leave in the fridge for an hour before serving #lemoncurd #flapjacks #fyp #recipe #recipes
