メロンパンは「模様」「グラニュー糖」「オーブン」の3つで仕上がりがかなり変わりました。私がチョコチップメロンパンを焼いたときに安定したコツを補足します。 【模様をくっきり出すコツ】 ・クッキー生地は“冷やしすぎない”：冷蔵庫20分が目安だけど、カチカチだとパンに密着せず、割れやすかったです。触って少ししなるくらいが◎。 ・パン生地の表面を乾かさない：ベンチタイム中は乾燥するとクッキー生地が貼り付かずズレやすいので、濡れ布巾orラップで軽く覆うとやりやすかったです。 ・格子は「浅く・先に」：深く切りすぎると焼成中に割れて模様が崩れがち。包丁やカードで“表面に線を描く”程度にして、2次発酵に入る前に模様付けまで終わらせると、発酵で線がゆるくなりすぎるのを防げました。 【グラニュー糖をきれいに付けるコツ】 ・模様を付けたあとに表面へ：先に砂糖をのせると線が引きにくく、模様が汚くなりやすかったです。 ・押し付けない：指でギュッとするとクッキー生地が割れやすいので、上から“ふわっと散らす”だけで十分ザクザク感が出ました。 ・砂糖の量は好みで調整：たっぷりだとカリカリで見た目も王道、控えめだと焼き色が素直に出て焦げにくかったです。 【オーブンで失敗しにくい焼き方】 ・予熱は必須：180℃で12〜15分のレシピでも、予熱が甘いと焼き時間が延びて表面だけ濃くなったり、底が固くなったりしました。 ・天板の段を真ん中に：上段だと表面が先に色づきやすいので、焦げ注意なときは中段が安心。 ・焼き色が早いときは途中でアルミ：10分前後で色が十分なら、ふんわりアルミをかぶせると模様を守りつつ中まで火が入りました。 【よくある「模様が消える」原因】 ・2次発酵の取りすぎ：膨らみすぎると格子が伸びて薄くなりました。目安時間よりも、生地がふっくらして指で押すとゆっくり戻るくらいで焼くと模様が残りやすいです。 この3点（模様の浅さ、グラニュー糖のタイミング、オーブンの予熱）を意識したら、格子模様がくっきりで、表面はザクザク・中ふわに近づきました。
