... Read moreOkay, so I recently stumbled upon the ultimate hassle-free dinner solution that has completely transformed my weeknights: shrimp, potato, and asparagus foil packs! Seriously, if you're looking for a delicious, healthy, and incredibly easy meal, especially if you're aiming for a lean body diet, this is it. I used to dread the cleanup after cooking, but with these foil packets, it's a breeze. Here’s how I make my go-to healthy shrimp dinner. It’s perfect for one or two, and you can easily scale it up! What you'll need: About 6-8 large shrimp, peeled and deveined 1 cup of mini potatoes, halved or quartered (they cook faster!) 1 bunch of fresh asparagus, woody ends trimmed 1-2 tablespoons olive oil (or skip for cooking shrimp without oil if you prefer) Seasoning: Garlic powder, onion powder, paprika, salt, and pepper. Sometimes I add a squeeze of lemon juice for extra freshness! Aluminum foil My Easy Foil Pack Method: Prep the Veggies: First, I get my potatoes ready. I toss them with a little olive oil (or a splash of vegetable broth if I'm cutting down on oil) and half of my seasoning blend. For how to cook mini potatoes in the oven perfectly, par-boiling them for about 5-7 minutes beforehand can help, but honestly, in foil packs, they soften up beautifully. Season the Shrimp & Asparagus: Next, I add the shrimp and trimmed asparagus to the bowl with the remaining seasoning. A little more olive oil or broth here helps the seasoning stick. This is also where I’d add garlic or lemon. Assemble the Foil Packs: Lay out a large piece of heavy-duty aluminum foil. You'll want it big enough to fold over and seal completely. I usually do individual packs. Place the seasoned potatoes in the center, then top with the shrimp and asparagus. Seal It Up: Bring the long sides of the foil together and fold them down tightly, creating a sealed packet. Then, fold in the short ends to completely enclose everything. You want a good seal to trap the steam and flavors. This is key to how to steam shrimp in the oven effectively within the packet! Cook! I usually preheat my oven to 400°F (200°C). Place the foil packs on a baking sheet. Bake for about 15-20 minutes, or until the shrimp are pink and cooked through, and the potatoes are tender. If you want to know how to make soft asparagus in the oven, cooking it in these foil packs is a fantastic method – it steams perfectly! Grilling Option: These are also amazing on the grill! For the best way to cook asparagus on the grill, simply place the sealed foil packs directly on the grill grates over medium-high heat for about 12-15 minutes. It’s also a great way to cook shrimp and potato foil packets in the oven or on the grill. The beauty of this recipe is its versatility and how incredibly tasty it is while being so healthy. It truly fits into a diet for lean body goals because you can control the oil and seasonings, focusing on fresh ingredients. No wonder it's become one of my absolute healthy shrimp meals!
