You guysss I think I just found my new favorite spring/summer treat! 😍
My FYP has been flooded with the “Lemon Pound Cake” song by Afroman when it accidentally played in court, and I quite literally started craving a lemon pound cake because of it, so obviously I had to make it! One of the most delicious recipes I’ve ever made + it’s SO quick and easy!!
Here’s the deets on the recipe👇🏻
Ingredients:
•1 whole box lemon cake mix
•1 box lemon instant pudding mix (3.4oz box)
•4 large eggs
•3/4 cup vegetable oil
Cooking instructions⬇️
Mix all ingredients together in a large bowl until you get a nice, thick batter. Pour the mixture into your baking pan until it’s about 2/3 full (depending on the size of your pan, you may have some leftover batter).
Set oven to 325 degrees, grease the inside of the pan with cooking spray and bake for about 45-50ish minutes. Around the 45-minute mark, check the pound cake by sticking a toothpick in the center. If it comes out clean or with a few moist crumbs, the cake is ready. Otherwise if it comes out wet at all, it needs more time to bake!
Once the pound cake is ready, take it out of the oven and let it cool for about 10-15 minutes. In the meantime, mix 1/2 cup powdered sugar with 1tsp water in a small bowl for the glaze. Keep adding droplets of water until you reach your desired consistency. Thick glaze = less water.
Drizzle the glaze over the top of the pound cake and garnish with some lemon zest!
