But then I stumbled upon the amazing world of regrowing food, and honestly, it’s transformed my grocery budget and my kitchen! It feels like magic watching fresh greens sprout from something I was about to toss. Plus, who doesn't love getting free food, right? This is my personal guide to some of the easiest and most rewarding foods you can regrow right from your kitchen scraps, mostly just using water! My Favorite Foods to Regrow from Scraps (Mostly in Water!) Romaine Lettuce: This is probably the easiest! After you’ve enjoyed your salad, keep the white base of the romaine lettuce head, about an inch or two tall. Place it in a shallow dish with just enough water to cover the bottom. Change the water daily. In just a few days, you'll see new leaves emerging from the center. Within a week or two, you'll have enough fresh, tender leaves for another small salad or sandwich topping. I love harvesting the outer leaves and letting the inner ones continue to grow! Green Onions: If you haven't tried regrowing green onions, you're missing out on instant gratification! Just cut off the white ends with the roots attached, leaving about an inch. Pop them into a small glass with a bit of water, enough to cover the roots. Place it on a sunny windowsill, and you'll see noticeable growth almost overnight. They grow incredibly fast, providing an endless supply for garnishes and cooking. Carrot Tops: You won't regrow a full carrot, but you can absolutely regrow the greens! These fern-like greens are edible and can be used in pesto, salads, or as a vibrant garnish. Simply cut off about an inch from the top of a carrot, place it cut-side down in a shallow bowl of water. Remember to change the water regularly. It’s a super fun project, especially for beginners! Potatoes: Regrowing potatoes is a bit different but so rewarding. You'll need a potato that has started to sprout "eyes." Cut the potato into pieces, ensuring each piece has at least one eye. Let these pieces dry for a day or two to callous over, which prevents rot when planting. While you can start them in water to encourage more sprouts, the best way to get new potatoes is to plant them directly in soil or a large container once the sprouts are an inch or two long. I've had great success with this in grow bags! Celery: Just like romaine, cut off the base of a celery stalk, about 2 inches from the bottom. Place it in a shallow bowl with a little water, just covering the bottom. New stalks will begin to grow from the center. Once it has a good root system and some new growth, you can transfer it to soil for bigger stalks, or keep it in water for smaller, fresh leaves. Ginger: Pick a plump piece of ginger with visible "eyes" or buds. You can soak it in warm water overnight to encourage sprouting. Then, plant it in a pot with good draining soil, eye-side up, just below the surface. Keep the soil moist, and in a few weeks, you should see sprouts. It's a cool experiment, though it takes a while to get a full root. Garlic: Take a single garlic clove and place it root-end down in a small container with a bit of water, or directly into soil. You'll get tender green garlic shoots that are delicious and milder than mature garlic. You can snip the greens as needed for cooking. Sweet Potato: For a fun, longer-term project, suspend a sweet potato (using toothpicks) in a jar of water, with about half of it submerged. Place it in a warm, sunny spot. Roots will form in the water, and "slips" (vines) will grow from the top. Once these slips are about 6 inches long, twist them off and root their bottom ends in water. Once rooted, plant these slips in soil for new sweet potatoes! It's truly incredible how much food waste we can prevent and how much money we can save by giving these kitchen scraps a second life. My kitchen has turned into a mini urban farm, and I love the feeling of self-sufficiency. Give it a try – you might just surprise yourself with your green thumb!
