I always make sure there are still some tiny roots visible at the very bottom. For the water, I find smaller, narrower jars actually work best because they offer more support to the stalks. As for changing the water, it's not just about preventing bacteria, it's about providing fresh nutrients and oxygen. I try to change mine every single day, or at least every other day. If you see the water getting cloudy or a bit slimy, that's your cue to change it immediately and maybe even give the roots a gentle rinse. Placement is key for successful regrowing scallions on a windowsill. They absolutely love sunlight. My brightest kitchen window is their happy place. If they start to look pale or leggy, they're probably not getting enough light. I've even rotated my jars occasionally to ensure even growth.
