Pickling banana peppers is one of my favorite ways to preserve the fresh produce from my garden. The process is straightforward and doesn’t require any special equipment beyond basic kitchen tools. I start by selecting ripe banana peppers that are firm and bright yellow for the best flavor and texture. First, I wash the peppers thoroughly and slice them into rings or strips depending on how I plan to use them later. If you like a bit of spice, you can add some chili flakes or a sliced hot pepper to the mix. I prepare a simple pickling brine with equal parts vinegar and water, a bit of sugar, some garlic cloves, and a pinch of salt. Heating the brine helps dissolve the sugar and salt, so the flavors meld nicely.
