Cottage cheese can be replaced by ricotta and vice versa. Tofu can replace both (others mentioned ricotta but cottage cheese can also be replaced by tofu). Yogurt can replace butter if you are low on butter. I’ve run out of butter before. There are other butter replacements. I think applesauce is also a butter replacement (not just an egg one).
