Mini Vanilla Bundt Cakes
Today we’re making Mini Vanilla Bundts. This is my first time trying these, so I’m basically a professional baker now. Please don’t check my credentials.
Start by creaming the butter and sugar until it’s fluffier than a cloud in a cartoon.
Add three eggs and some vanilla bean paste.
See those little black flecks? That’s how you know it’s "gourmet" and not just "yellow bread."
Now, we alternate the dry stuff and the milk. It’s a delicate dance of chemistry and me just trying not to make a mess on the counter.
Into the mini pans they go. I greased these like I was preparing for a slip-and-slide, because we are not losing a cake to the pan today.
Into the oven at 350 for 16 minutes—just enough time to wash the dishes and realize I definitely missed a spot.
And look at those beauties. No frosting, no glaze, and nowhere for mistakes to hide.
