Fajitas
Taco Tuesday Time. Well Fajitas but it’s close 😁
Fajitas are one of my favorite meals when I want something both satisfying and fun to make. What I love about steak and chicken fajitas is the balance of flavors and textures—the juicy, marinated meats paired with sautéed bell peppers and onions wrapped in warm tortillas make every bite delightful. In my experience, the key to perfect fajitas is in the marinade. I usually use a mix of lime juice, garlic, cumin, chili powder, and a bit of olive oil, which helps tenderize the meat and infuse it with that authentic Tex-Mex flavor. Letting the steak and chicken rest in the marinade for a few hours really makes a difference. When cooking, I find it best to cook the steak and chicken separately so you can control their doneness. Thinly slicing the meat before cooking helps it cook fast and evenly. The bell peppers and onions, ideally green, red, and yellow peppers, add a nice crunch and color contrast when quickly sautéed until just tender. Serving the fajitas with warm tortillas is a must—flour or corn works depending on your preference—and adding toppings like fresh cilantro, sour cream, guacamole, or shredded cheese can elevate the meal even more. For a fun twist, sometimes I like to prepare a side of Mexican rice or black beans to complete the dinner. Fajitas are great because they are customizable and work well for casual family dinners or Taco Tuesday gatherings with friends. Overall, steak and chicken fajitas are a delicious and versatile option if you're looking to shake up your dinner routine while keeping things flavorful and easy to make.
