Serves 4–6
Ingredients
* 2 chicken breasts
* 32 oz chicken broth
* 2 bay leaves
* 1 tbsp chicken bouillon
* 16 oz heavy cream
* 1 stick (½ cup) unsalted butter
* ½ cup all-purpose flour (adjust as needed)
* 1 (16 oz) bag frozen mixed vegetables (peas, carrots, green beans)
* 1 tsp seasoning salt
* Salt & black pepper, to taste
* 1 box pre-made pie crust (2 crusts)
* 1 egg (for egg wash)
Instructions
1. Cook the chicken
* In a large pot, combine the chicken broth, bouillon, bay leaves, and chicken breasts.
* Bring to a boil, then reduce to medium-high heat. Cook for 20–30 minutes, or until the chicken reaches 165°F.
* Remove the chicken, set aside to cool, then shred into bite-sized pieces. Reserve the broth.
2. Make the filling
* In a clean pot, melt the butter over medium heat, stirring often until lightly browned (don’t let it burn).
* Slowly whisk in the flour to form a roux, adjusting the flour amount so it’s thick but smooth.
* Strain the reserved chicken broth into the roux, discarding bay leaves and solids. Stir until well combined.
* Add seasoning salt, pepper, and heavy cream. Continue stirring until the mixture thickens.

3. Assemble the pie
