Fresh Seasoning Right From The Windowsill FOR FREE

✨Disability- friendly

✨Small space approved

There’s something so satisfying about snipping your own seasoning from the windowsill. I started doing this with store-bought green onions that I placed in a simple jar of water, and they just keep multiplying! Every week I trim a few, dry them out, and make my own homemade green onion seasoning.

They grow, and I do it again and again until the plant finally bolts. So you pay for the first batch, but the next 4 and even more batches are completely free! I can easily get about five harvests from each stalk. You can get even more if you transfer them back to fertilized soil once the roots are long and strong.

When keeping them in water, change the water every few days to avoid rotting. If the water turns cloudy or smells off, you risk losing your plants. In soil, lightly water when the top layer begins to dry. This is usually once or twice a week. More often depending on your soil, heat, and sun conditions. You can also bottom-water them so the plant takes only what it needs. Just don’t drown them! Green onions water-log easily and are prone to root rot.

After every snip, rinse and dry your green onions. I use a clean napkin, or you can set them out on a drying rack. Then pop them into a low oven to dry completely. Use the lowest heat setting possible and watch them closely so they don’t burn. It’s okay if they get a little brown. I actually like a touch of that blackened flavor. Just don’t overdo it or it’ll taste burnt.

Once the green onions are fully dried, I crush them up and use them in almost everything. It’s an easy way to stretch your groceries, reduce waste, and always have fresh flavor on hand.

If you’re ready to get creative, here are a few more herbs and veggies that make amazing dried seasonings:

🌿 Celery leaves (so underrated!)

🌱 Basil

🌿 Rosemary

🌿 Thyme

🧄 Garlic

🧅 Onion

🌶️ Peppers

Mix and match to create your own signature blends! My go-to table blend is garlic, green onion, celery leaves, and sea salt. It’s perfect on eggs, salads, sandwiches, and yes even French fries. I put that ish in EVERYTHING! 😅

Drying and blending your own herbs isn’t just practical, it’s peaceful. It’s a grounding little ritual that connects you to what you grow, eat, and create. Start with one jar on your windowsill and see how far your flavors can grow.

This style of gardening is disability-friendly and great for small spaces. You don’t need land to get into the homesteading lifestyle. Just grow something!

If you were to make the perfect seasoning blend for yourself, what would you put in it? Let’s chat below!

... Read moreStarting your own windowsill herb garden is an incredibly rewarding experience, especially when it allows you to consistently produce fresh seasoning for free. Beyond green onions, many other herbs and vegetables thrive just as well in compact, accessible environments, making this approach ideal for anyone with limited space or mobility. With a simple setup—using recycled glass jars or bottles filled with water or soil—you can cultivate celery leaves, basil, rosemary, thyme, garlic, onion, and even small peppers. These plants not only add vibrant flavors to your meals but also offer therapeutic benefits; the act of nurturing your garden can be a calming, grounding ritual. The key for success indoors is proper care: remember to change the water frequently to prevent root rot and keep an eye on soil moisture if planting in pots. Bottom-watering is a smart way to provide just the right amount of hydration without overdoing it. When harvesting, clean and thoroughly dry your herbs using a low oven temperature to preserve their natural flavors. Pulsating dried herbs in a coffee grinder or blender helps achieve a fine texture perfect for seasoning blends. An exciting part of this process is experimenting with mix-and-match blends. Popular combinations include garlic, celery leaves, and green onions with sea salt, which enhance everything from eggs to fries. Creating your signature seasoning blend not only stretches your grocery budget but also reduces food waste by using parts of plants often discarded. Moreover, this gardening style is truly disability-friendly. No need for traditional raised beds or large outdoor space—just a sunny windowsill and simple containers. This inclusivity opens the door for many to engage in healthy homesteading practices right at home. If you’re considering starting your own seasoning blends, think about flavors you love and herbs you can grow easily indoors. Share your favorite mix ideas with fellow gardeners to inspire and learn new combinations. Remember, tiny gardens can indeed make a big impact on your lifestyle and well-being – fresh, flavorful, and sustainable!
