Fresh Seasoning Right From The Windowsill FOR FREE

There’s something so satisfying about snipping your own seasoning from the windowsill. I started doing this with store-bought green onions that I placed in a simple jar of water, and they just keep multiplying! Every week I trim a few, dry them out, and make my own homemade green onion seasoning.

They grow, and I do it again and again until the plant finally bolts. So you pay for the first batch, but the next 4 and even more batches are completely free! I can easily get about five harvests from each stalk. You can get even more if you transfer them back to fertilized soil once the roots are long and strong.

When keeping them in water, change the water every few days to avoid rotting. If the water turns cloudy or smells off, you risk losing your plants. In soil, lightly water when the top layer begins to dry. This is usually once or twice a week. More often depending on your soil, heat, and sun conditions. You can also bottom-water them so the plant takes only what it needs. Just don’t drown them! Green onions water-log easily and are prone to root rot.

After every snip, rinse and dry your green onions. I use a clean napkin, or you can set them out on a drying rack. Then pop them into a low oven to dry completely. Use the lowest heat setting possible and watch them closely so they don’t burn. It’s okay if they get a little brown. I actually like a touch of that blackened flavor. Just don’t overdo it or it’ll taste burnt.

Once the green onions are fully dried, I crush them up and use them in almost everything. It’s an easy way to stretch your groceries, reduce waste, and always have fresh flavor on hand.

Drying and blending your own herbs isn’t just practical, it’s peaceful. It’s a grounding little ritual that connects you to what you grow, eat, and create. Start with one jar on your windowsill and see how far your flavors can grow.
