Panjeeri Recipe makes: 16
2 cups semolina
1 cup almond
3/4 cup cashew
1/2 cup sliced coconut
2 tsp cardamom
80 g sugar
350 ml milk
Desi Ghee: 1 cup to fry the nuts add about 1/2 cup more to roast semolina
Making Panjeeri at home has always been a delightful experience for me due to its wholesome ingredients and comforting aroma. The use of desi ghee to roast nuts and semolina is essential—it brings out the natural flavors and ensures the mixture is rich and aromatic. When preparing the 2 cups of semolina, roasting it slowly with 1/2 cup of ghee until golden is crucial to avoid any raw taste. Adding a mixture of almonds and cashews provides a satisfying crunch and boosts the nutritional value. I also love incorporating 1/2 cup of sliced coconut for a subtle tropical sweetness that complements the warming 2 teaspoons of cardamom, which adds a fragrant note that defines the authentic taste of this dish. Using 80 grams of sugar balances the flavors without being overpowering. Finally, the 350 ml of milk helps bind all the ingredients, creating a soft yet textured Panjeeri. This recipe is perfect as an energy-boosting snack or a traditional postpartum supplement. The ingredients, rich in healthy fats and proteins, also make it a wonderful winter tonic. For best results, store Panjeeri in an airtight container, and consume it within a week to enjoy its fresh taste and maximum nutritional benefits.
