One thing I love about making breakfast egg bites is how customizable they are to fit your dietary preferences and what you have on hand. I always use cage-free eggs because I find the taste richer and it aligns better with my ethical food choices. Washing your bell peppers thoroughly, as mentioned, is a good practice to remove any residues. Adding a variety of vegetables like spinach, mushrooms, and different colored bell peppers not only amps up the flavor but also adds important nutrients. I recommend precooking your sausage if you choose to add it, to ensure it’s fully cooked and to reduce grease in the bites. The use of Tillamook sharp cheddar and Colby Jack cheeses provides a creamy, savory taste, but feel free to experiment with other cheeses like feta or mozzarella depending on your taste. When mixing, be gentle to keep some texture but make sure all ingredients are well combined for even distribution. Spraying the muffin pan well helps with easy removal. Bake at 350°F for about 15-25 minutes; the exact time depends on your oven and the size of your muffin cups. I usually start checking at 15 minutes and adjust from there. These egg bites store well in the fridge and reheat nicely, making them excellent for meal prep. Personally, I prepare a batch on Sundays and use them throughout the week for quick breakfasts. They’re both filling and nutritious, giving me energy without feeling heavy. Lastly, feel free to adjust the cream amount to make the bites more or less custardy according to your preference. Adding herbs like parsley or chives can add a fresh twist as well. Enjoy your homemade healthy breakfast egg bites!
