Easy Crockpot Chicken, Potato & Zucchini Stew

Ingredients:
• 1.5–2 lbs chicken breast or thighs
• 1 lb baby potatoes, halved
• 2 cups carrots, chopped
• 1 zucchini, sliced (or any other veggie you want!)
• ½–1 onion, chopped
• 3 cups low-sodium chicken broth
• 3 cloves garlic, minced
• 1 tsp dried thyme
• 1 tsp dried parsley
• ½ tsp salt + pepper
Instructions:
1. Add everything to the crockpot except zucchini
2. Cook on LOW for 6–7 hours (or high for 4-5)
3. Add zucchini in the last 30–40 minutes
4. Shred the chicken and stir everything together
5. Serve warm + enjoy
