I have been really enjoying having my lunch meal prepped!
I did a quick round of meal prep for the end of this week for lunches!
For the sweet potato I cooked it in the oven. I diced it into cubes and cooked it in olive oil, sea salt and cinnamon. I recommend cooking on 400 F for about 30-40 minutes. I like to cook mine til it’s crispy!
For the chicken I cooked it in olive oil, sea salt and Mrs dash southwest chipotle seasoning!
For the carrots, I used a frozen bag of carrots and cooked it in the microwave for 5 minutes.
Meal prepping has been a total game changer for keeping my lunches healthy and delicious throughout the week.
