MEDITERRANEAN TOFU PINEAPPLE SKEWERS W/ HAZELNUT ARUGULA PESTO, TZATZIKI & SALAD

✳️ FOR THE MARINADE ⤵️

🔹 3 tbsp extra virgin olive oil

🔹 3 tbsp lemon juice

🔹 2 tbsp low sodium soy sauce

🔹 1 tbsp maple syrup

🔹 1 tbsp pomegranate molasses (optional)

🔹 Seasonings: 1 tsp each onion powder, garlic powder, smoked paprika, cumin, sumac, Italian herbs, cayenne (optional) and sea salt and ½ tsp cinnamon

✳️ FOR THE SKEWERS ⤵️

🔹 1 block super firm tofu, chopped

🔹 1 medium red onion, chopped

🔹 1 each small red, orange and green bell pepper, chopped

🔹 2 cups pineapple, chopped

🔹 2 cups mushrooms, chopped

👉🏻 In a large lidded container, whisk together all the marinade ingredients. Once well mixed, add together all the skewers ingredients, cover and gently shake to coat all the veg then marinate for at least 1 hr or preferably overnight.

👉🏻 Once ready to cook, preheat oven to 450°F and assemble the skewers. Generously brush with the marinade then transfer to oven. Roast 15 mins then remove from oven to brush with marinade and continue cooking till veg is crispy and golden. Remove from oven, brush with marinade one last time and enjoy!

✳️ FOR THE PESTO ⤵️

🔹 1 cup hazelnuts

🔹 5oz arugula (about 3 cups)

🔹 1 cup basil, loosely packed

🔹 ¼ cup hemp hearts

🔹 ¼ cup nutritional yeast

🔹 ¼ cup extra virgin olive oil

🔹 ⅓ cup lemon juice

🔹 2 medium garlic cloves

🔹 1 tsp sea salt

👉🏻 Place the hazelnuts in a food processor and pulse till ground then add in the rest of the ingredients and pulse till smooth and creamy.

✳️ FOR THE TZATZIKI ⤵️

🔹 1 cup cucumber, grated then placed on a towel, sprinkled with salt and wrung out to release all the cucumber water

🔹 1 cup plant-based yogurt

🔹 1 medium garlic clove, grated

🔹 2 tbsp mint, chopped

🔹 2 tbsp dill, chopped

🔹 Juice from 1 lemon

🔹 1 tsp sea salt

👉🏻 Combine all the ingredients together in a bowl and mix well.Serve chilled.
