I don’t know about you, but I am TIRED of figuring out what is for dinner every single day. 😩
This dish though? It’s on rotation every week because of how easy and delicious it is! 🤤
In the Dominican Republic, it is called “Locrio” which is just rice mixed with meat! Below are the ingredients & the recipe if you want to add this easy meal to your dinner rotation! 🍚🇩🇴🤍
Ingredients:
- Rice (any of your choosing, I used Jasmine)
- Meat (can literally be ANY you want to add)
- Seasoning (any of your choosing)
- Sugar
- Oil
Recipe:
1. Cut up your meat into small and even pieces (make sure to wash it!)
2. In a pot, put a 2 tablespoons of cooking oil (it doesn’t matter which kind) and a teaspoon of sugar. Mix both until the sugar begins to brown, then put your meat.
3. Once your meat(s) is in, start to season.
4. when your meets are 80% cooked, start placing your rice (I did two cups but do what’s good for your family)
5. Add the same amount of cups of water. (Example: 2 cups rice = 2 cups water) or until the rice is covered
6. Let the water absorb on medium to low heat. Once the rice absorbs the water, stir it and put a lid on it, checking every 15/20 minutes until soft.

This Dominican Locrio recipe has become my go-to because it’s incredibly versatile and requires minimal fuss. What I love most is that you can customize it with whatever meat you have on hand—I've tried pork chops, salami, and even chicken—all work beautifully.
A key step that adds depth to the flavor is cooking the sugar and oil together until the sugar browns. This technique caramelizes the meat and gives the rice a slightly sweet, rich base, which pairs perfectly with savory seasonings like garlic, onion powder, and adobo. Using Jasmine rice adds a fragrant aroma but feel free to use any rice to fit your pantry.
Cooking the rice directly with the meat and seasonings means fewer pots and less cleanup, which is a big plus after a long day. I also appreciate that the recipe’s water-to-rice ratio is straightforward, making it easy to scale up or down depending on meal size.
For sides, avocado slices or tostones complement Locrio perfectly, adding creamy or crunchy textures that round out the meal. This dish also stores well, so making extra means you have a delicious, reheatable lunch or dinner ready the next day.
Overall, Dominican Locrio is not just a meal but a comforting staple that brings the warmth and flavors of the Dominican Republic into your kitchen with every easy step.
