For the chicken and rice:
I usually use celery, but I didn’t have any…
• Based the pan with veggie oil, added orange bell peppers, yellow onion, & garlic.
• Seasoned chicken (adobo, creole seasoning), let it sear.
• Once browned, added equal parts chicken broth & water to cover the chicken.
• Threw in a bouillon cube, seasoned the boil (garlic/onion powder, pepper, salt), & cooked until chicken was tender.
• Removed the chicken, shredded it (it should fall off the bone) & added it back in:
• Added a can of cream of chicken & 1 cup of rice. Covered & let it simmer until this creamy consistency.
✨ Super easy. Super filling.
FYI: I rarely measure! Just keep the chicken covered while cooking & adjust broth/water for your preferred thickness.
The sides? Leftovers from yesterday!
