One of the standout ingredients in this recipe is the country gravy. It adds such a creamy, savory layer that takes these bagels from good to absolutely amazing. If you've never made your own, don't worry, it's simpler than you think! For a perfect batch, I usually start by making a roux with some butter and flour, then slowly whisk in milk until it thickens. The OCR details are spot-on for getting that classic flavor: you'll need about 2 cups of milk and a light slurry made from 1 tablespoon of cornstarch mixed with 1 tablespoon of water to help thicken it further. Don't forget to season generously with salt, pepper, sage, and a touch of onion powder to taste. This homemade gravy truly makes all the difference!
