Pumpkin Cake Stuffed Cookies 🎃🍪

We wanted a sweet treat tonight!! There was some cookie dough left in the freezer & I grabbed some pumpkin cupcakes from Publix!! I wanted to experiment with stuffing cookies!! Then I went a little overboard by topping it with Dulce De Leche ice cream & whipped cream 😅

💥 Preheat oven to 350°

💥 Smash a couple of the cupcakes including the icing!! Roll into balls like if you were making cake pops!

💥 Roll out the cookie dough, put a cake ball in the middle, then roll cookie dough around the cake until completely covered!

💥 Place on a parchment baking sheet & bake about 15 minutes!

💥 Let cool for 5 minutes before eating!!
