Brown Butter Biscoff Stuffed Cookies
My kind of therapy comes with a whisk, a little butter, and a sweet ending.
Brown Butter Biscoff Stuffed Chocolate Chip Cookies 🍪🤎
Ingredients
* 1 cup unsalted butter (browned)
* 1 cup brown sugar
* ½ cup granulated sugar
* 2 eggs
* 1 tbsp vanilla extract
* 2 ½ cups all-purpose flour
* 1 tsp baking soda
* ½ tsp salt
* 1 ½ cups semi-sweet chocolate chips or chunks
* Biscoff crunchy or creamy cookie butter
* Biscoff cookies (crumbled)
Instructions
1. Brown butter over medium heat until golden and nutty. Allow it to cool slightly.
2. Scoop cookie butter (about 1 tablespoon each) onto parchment paper and freeze until firm.
3. Mix browned butter, brown sugar, and granulated sugar until smooth.
4. Add eggs and vanilla extract. Mix until combined.
5. Add flour, baking soda, and salt. Mix until a dough forms.
6. Fold in chocolate chips and crumbled Biscoff cookies.
7. Chill dough for 30–60 minutes for the best flavor and texture.
8. Scoop cookie dough, place a frozen cookie butter piece in the center, and completely cover it with dough.
9. Bake at 350°F for 10–12 minutes, or until edges are golden.
10. Let cool slightly and enjoy the gooey Biscoff center 🍪✨
