How I make my Mexican rice:
Brown 1 cup of rice in pan with just a little oil & about a tablespoon minced garlic.
Once golden brown, add about half a tablespoon of tomato paste, and about two tablespoons of chicken bouillon (not the cubes). Mix well until evenly covers rice.
I like to sprinkle in some basil or oregano
Add two cups of water (the perfect rice for me is always a 2:1 ratio of rice and water)
Cover and bring to a simmer
Keep on simmer for 20mins (DO NOT REMOVE LID)
Once 20mins has passed, turn off the heat and KEEP THE LID ON, and let it rest on the stove for another 10 mins.
It may be tempting to remove the lids but don’t do it! 😅
While your rice cooks, make your beans, nachos, and quesadillas! Or whatever you choose to pair with it! 😋
