Made a batch of breakfast sandwiches for the week and honestly… why have I not been doing this forever?!

• eggs (mini omelette)

• cheddar cheese

Cook the omelettes, assembled the sandwiches, then let them cool before storing. That part matters so they don’t get soggy! Also I use microwave bacon, so it cooks while it’s being reheated.

Wrap each one in parchment paper + throw them in a freezer bag
(fridge for a few days, freezer for longer)

Microwave wrapped in a damp paper towel for ~1-2 mins
OR air fry/toast oven if you want it a little crispy
