*Ingredients*
- 1 medium-sized cabbage, shredded
- 1 pound sweet or hot sausage (like Andouille or smoked sausage), sliced
- 2 tablespoons vegetable oil
- 1 onion, chopped (optional)

- Salt and pepper, to taste
- Optional: 1 teaspoon paprika, 1/4 teaspoon cayenne pepper
*Instructions*
1. *Cook the sausage:* Heat oil in a large skillet over medium-high. Add sausage and cook until browned, about 5 minutes. Remove sausage from skillet, leaving drippings.
2. *Soften the cabbage:* Add more oil if needed, then add onion and garlic (if using). Cook until softened, about 3-4 minutes. Add cabbage, salt, pepper, paprika and cayenne (if using).
3. *Combine and cook:* Return sausage to skillet. Stir to combine. Reduce heat to medium-low, cover and cook for 20-25 minutes or until cabbage is tender.
4. *Serve:* Serve hot, garnished with chopped green onions or parsley.
