Easy Spicy Cajun Chicken/Steak Pasta

Ever looking for that perfect meal prep idea that's both super easy and ridiculously tasty? Well, today's your lucky day! I'm sharing a recipe straight from my personal cookbook: my Easy Spicy Cajun Chicken/Steak Pasta. And here's the fun part: I'm going to tell you exactly how I made it the first time, and then what I'd tweak for next time. Because that's the beauty of cooking, right? It's all about experimenting and making it yours. Let's get into it!

First up, the star of the show: the creamy Cajun sauce. You can totally use your favorite store-bought Cajun seasoning for this, or if you're feeling fancy, make your own! My secret ratio is 1 teaspoon of Cajun seasoning per 2 tablespoons of plain Greek yogurt. Seriously, this ratio is a flavor explosion, so go easy at first and adjust to your taste. A little bit packs a huge punch! Whether you're a "drown it in sauce" person or prefer a light coating (like me!), this sauce is adaptable.

Next, grab some chicken breast or steak – however much your heart desires! Cube it up and give it a light sprinkle of that amazing Cajun seasoning. And for the pasta, you know the drill – measure with your heart. 😉

Here’s exactly what I did for my first go:

1 serving of pasta

5 oz of air-fried chicken cubes (cooked at 400F for 12 minutes)

2 tablespoons of my creamy Cajun sauce (made with store-bought Cajun seasoning and plain Greek yogurt)

A little sprinkle of grated Parmesan cheese on top for good measure.

Mixed it all up and served it hot. And you know what? It was genuinely good! The flavor was absolutely on point.

But, you know me, always thinking ahead! While the flavor was fantastic, I did wish for a little more creaminess. Next time, I'd definitely add an additional tablespoon of Greek yogurt. This would dial down the heat just a touch and give it that super creamy texture I'm craving, without losing any of that incredible flavor. Plus, I think a little paprika would give the sauce an even more vibrant color, especially with that extra yogurt. And one last thing – I'd cut the chicken into smaller cubes, maybe even half the size, so you get chicken in every single bite of pasta. Perfection!

This dish is a winner for meal prep, too, coming in at around 450 calories and 37 grams of protein.
