This time, I was particularly impressed by the red meat of Yamasachi tuna.
The moment I put it in my mouth, the umami spread and I still can't forget it.
Kombu tightening of flounder and striped horse mackerel were also delicious, and I felt the careful work of the craftsman for each consistency.
And what surprised me was the rare brain heaven that only 0.5% can be taken from tuna.
The sweetness of the fat and the texture were exceptional.
Furthermore, the liver sauce of dried abalone is rich, and it remains an impression until the end.
