For the other veggies, I follow the original recipe's fantastic suggestions: zucchini, yellow squash, carrots, and juicy tomatoes. When I'm sautéing them, I make sure not to overcrowd the pan so they get a nice char without steaming. A little bit of olive oil and a generous sprinkle of cajun seasoning, onion powder, garlic powder, salt, pepper, paprika, and a touch of cayenne pepper really brings out their flavor.
