Fall is here and so are the bagels!! 🧡🎃🍂🍁
🍁 Pumpkin-Spice Orange Bagels (3) & 🍎 Apple-Cinnamon Bagels (3)
Base Bagel Dough (for 6 total)
* 2 tsp instant yeast
* 1 tbsp brown sugar (or honey)
* ¾ cup warm water (110°F)
* 2 cups bread flour (plus more for kneading)
* 1 tsp salt
Pumpkin-Spice Orange Mix (for 3 bagels)
* 1 tbsp pumpkin purée
* ¼ tsp pumpkin pie spice
* A drop of orange food coloring (or a pinch of turmeric for natural color)
Apple-Cinnamon Mix (for 3 bagels)
* 2 tbsp finely chopped dried apple (or sauté fresh apple pieces until soft & dry)
* ½ tsp cinnamon
* ½ tbsp brown sugar
Instructions
Tonight (Prep the Dough)
1. In a bowl, mix warm water, yeast, and brown sugar. Let sit 5 minutes until foamy.
2. Stir in flour + salt. Mix until a shaggy dough forms.
3. Knead 8–10 minutes until smooth and elastic (add flour if sticky).
4. Divide dough in half.
* Pumpkin half: Knead in pumpkin, spice, and coloring until uniform.
* Apple half: Knead in cinnamon, sugar, and apple pieces.
5. Roll each half into a ball, cover, and let rest 10 minutes.
6. Divide each half into 3 equal pieces (for 6 total). Shape into bagels (poke a hole + stretch gently).
7. Place on parchment-lined baking sheet. Cover with plastic wrap. Refrigerate overnight.
Tomorrow (Boil + Bake)
1. Remove dough from fridge, let sit 20–30 minutes while you prep.
2. Bring a large pot of water to a boil. Add 1 tbsp brown sugar or honey (gives shine + chew).
3. Preheat oven to 425°F.
4. Drop bagels into boiling water, 1–2 at a time. Boil 45 seconds per side. Remove, drain.
5. Place back on parchment. (Optional: sprinkle cinnamon sugar on apple ones, or coarse sugar. For pumpkin, you could do a dusting of cinnamon-pumpkin spice sugar.)
6. Bake 18–22 minutes until golden and set.
7. Cool slightly, then devour!
