One of my go-to recipes is the open-faced croissant sandwich topped with a perfectly cooked egg, fresh tomato slices, baby spinach, and cheese, drizzled with a tangy barbecue sauce. The flaky croissant adds a buttery richness that complements the fresh veggies beautifully, while the egg provides a good dose of protein to keep you fuller longer. Another favorite is the vegetable frittata sprinkled with shredded cheddar cheese. Frittatas are incredibly versatile — you can add in any veggies you have on hand, such as bell peppers, onions, mushrooms, or zucchini. The combination of eggs and vegetables delivers a nutrient-dense meal that fuels your body without feeling heavy. I usually prepare these dishes in East Tennessee, and what I love about these recipes is how easy they are to customize. For example, swapping in different cheeses or adding herbs like basil or parsley adds exciting layers of flavor.
