Gluten free cinnamon swirl bread

Homemade cinnamon swirl bread 🍞 (I used gluten-free bread flour, but you can always use regular!)

Ingredients:

— 1 1/4 cups warm water (around 100˚F)

— 2 tbs sugar

— 2 tbs vegetable oil

— 1 tbs white vinegar

— 1 packet yeast

— 2 1/2 cups bread flour (I used @kingarthurbaking )

— 1 tsp cinnamon

— 1 tsp vanilla

— pinch of salt

egg wash: 1 beat egg with a splash of water

cinnamon center:

— 3 tbs melted butter

— 1 tbs cinnamon

— 2 tbs packed brown sugar

— 1 tbs regular sugar

how-to:

1. Whisk to the yeast into the water water and let sit about 5 minutes.

2. Add the yeast mixture to a bowl with the rest of the bread ingredients. Stir until combined, and let rest for 20 minutes.

3. Remove the dough from the bowl and knead with your hands or a stand mixer until it becomes smooth, and bounces back slowly when you poke it.

4. Let rise for about an hour.

5. After it’s about doubled in size, roll it out and spread generously with the cinnamon, butter, sugar mixture.

6. Roll it tightly into a log, and let is rest 1 more hour.

7. Preheat the oven to 400˚, and brush the loaf with egg wash and sprinkle with a bit of sugar. Bake for 30-35 minutes.
