Focaccia:
— 1 packet instant yeast
— 1 1/2 cups warm water
— 1 tsp sugar
— 3 cups bread flour* + 2 tbs sugar
— 1/8 cup olive oil
*bread flour helps give it a nice, chewy texture, but you can also sub all-purpose.
Whipped cream:
— 2 cups heavy whipping cream
— 3/4 cup powdered sugar
— 1 tsp vanilla
+strawberries & fresh basil (for a more classic shortcake, you can also skip the basil)
How-to:
1. Whisk together the yeast, 1 tsp sugar, and 1/2 cup of warm water in a small bowl. Let it sit for about 5 minutes until the yeast starts to bloom (it will look a bit frothy).
2. Mix with the other 1 cup of warm water, flour, 2 tbs sugar, and olive oil. Gently stretch into a greased pan, and let rise for about an hour until doubled in size.
3. After an hour, drizzle with a bit of olive oil, and dimple with your fingers. Add on sliced strawberries and pieces of basil.
4. Let rest about 30 more minutes until puffy, and bake for 20-25 minutes at 425˚ until golden brown.
5. Let cool, whip together whipped cream ingredients, and serve with more fresh strawberries.

Okay, so you've just made this incredible strawberry and cream focaccia recipe, right? I'm still dreaming about my last batch! It's truly a game-changer for summer desserts. But if you're like me, you might have a few questions after your first bake, or maybe you're looking for ways to make it even more 'you'! First off, let's talk about that amazing focaccia texture. My secret for that perfect chewy, airy crumb? Don't rush the rising process! Giving your dough the full hour (or even a little longer if your kitchen is cool) for the first rise, and then another 30 minutes for the second, really makes all the difference. And those dimples you press in? They're not just for looks; they help create those lovely pockets that hold all the delicious toppings and contribute to that classic focaccia bite. Speaking of texture and flavor, let's talk about the unsung hero: OLIVE oil! Using a good quality extra virgin OLIVE oil isn't just for greasing the pan; drizzling it generously over the dimpled dough before baking adds so much richness and helps achieve that beautiful golden, slightly crispy crust. Trust me, it makes a huge difference in the final taste and mouthfeel. It brings a subtle savory note that perfectly balances the sweetness of the strawberries and cream. And that whipped cream? If you want it extra stable, especially for a summer day, try chilling your mixing bowl and whisk attachment in the freezer for about 10-15 minutes before you start. It helps the cream whip up faster and hold its shape longer. Some people even add a tiny bit of cream cheese or a spoonful of cornstarch to make it hold up better – I haven't tried it yet, but it's on my list for my next bake! What I absolutely love about this recipe is how customizable it is! While the strawberry and basil combo is divine, don't be afraid to experiment. I've seen friends try it with other summer fruits like sliced peaches and a sprinkle of fresh rosemary, or even a mix of different berries. A little lemon zest folded into the dough or sprinkled on top before baking could also add a fantastic brightness. Imagine a drizzle of balsamic glaze over the finished product for an elegant touch! This focaccia isn't just for dessert; it's amazing for a fancy brunch spread or a potluck. Pair it with a light sparkling rosé or a homemade mint lemonade for the ultimate summer vibe. It's always a showstopper and sparks so many conversations! Okay, so this is definitely best enjoyed fresh, warm from the oven with the whipped cream just added. But if you happen to have leftovers (which is rare in my house!), store it in an airtight container in the fridge. You can gently warm it up a bit, but for the best experience, try to add the whipped cream right before serving. Anyway, I hope these extra tips help you fall even more in love with this sweet focaccia. It's such a fun bake, and always a crowd-pleaser. Happy baking, everyone!
