Big Mac Smash Tacos! 🍔🌮🍟

Got the recipe and idea from my brother, and mannnn are these delicious!!! My brother and I are both vegetarians so we made ours with impossible meat but my boyfriend and my brothers girlfriend had theirs with regular lean ground beef. Real beef does shrink a lot more than veg meat so it takes a bit longer to cook.

The tortillas I used are keto friendly so they are lower in carbs and calories!!

Tips:

- out of 12oz veg meat I got 6-7 tacos

- out of 16oz reg meat I got 8–8.5 tacos

- make the sauce ahead of time, it’s better the longer it chills

- thin slice cheese works better since it is such a small taco plus it’s a fraction of the calories!

These tacos are somewhere between 160-190 calories and 10-15g of protein!

I had plenty leftover so I am planning to reheat them in my air fryer to crisp up the tortilla a bit!

Lastly, I had most of the sauce ingredients but I had to purchase: tortillas, both meats, lettuce, cheese, mayo, relish, tomatoes, fries and a few other groceries to make dessert. My total bill was $53ish with everything so I’d say $40-$50 is a good range that it would cost to make this meal. Which gets 2 people 2 meals easily!!

... Read moreHey everyone! So glad you're loving the Big Mac Smash Tacos! I wanted to chat a bit more about using Impossible Beef Lite, especially for those of you who, like me, are exploring vegetarian options or just curious about plant-based meats. When my brother and I first tried these with Impossible Beef Lite, we were genuinely surprised at how well it worked – it really holds its own against traditional ground beef in this smash taco format! One thing I noticed that's super important: Impossible Beef Lite cooks a little differently than regular ground beef. My original tip mentioned how real beef shrinks more, and that's true! With Impossible Beef Lite, you get a more consistent yield. When smashing it onto the tortilla, aim for a thin, even layer. It browns beautifully, but keep an eye on it – it might not get that intense dark crust you'd expect from beef, but it will develop a lovely char. I usually cook it on medium-high heat for about 3-4 minutes per side, just until it's nicely browned and a bit crispy. Don't be afraid to season it generously! Impossible Beef Lite really soaks up flavors, so don't skip those salt, pepper, and any other spices you'd use for ground beef. For these tacos, a little garlic powder and onion powder mixed in before cooking really elevates the 'meaty' flavor. Texture-wise, it's fantastic for smash tacos. It gets that perfect crispiness around the edges while staying juicy inside. If you're new to cooking with plant-based meats, don't overthink it – just treat it like you would lean ground beef, but remember it won't render as much fat, so you might need a tiny bit of oil if your pan isn't perfectly non-stick. Beyond just being a delicious vegetarian alternative, choosing Impossible Beef Lite comes with some cool perks. For starters, it’s often lower in saturated fat compared to traditional ground beef, which is great for those mindful of their diet. Plus, knowing it's a more sustainable choice makes me feel good about what I'm eating. It's a win-win for taste and planet! It's also incredibly versatile. While these smash tacos are an absolute hit, I've also used Impossible Beef Lite for pasta sauces, burritos, and even homemade veggie burgers. It holds its shape well and adapts to so many different cuisines, making it a staple in my kitchen. If you're looking to cut down on meat without sacrificing flavor or texture, I highly recommend giving it a try. You can usually find Impossible Beef Lite in the refrigerated plant-based meat section of most major grocery stores. Sometimes it’s near the regular ground beef, other times it’s in its own dedicated plant-based aisle. Keep an eye out for sales too, as it can sometimes be a bit pricier than conventional meat, but definitely worth it for the quality and the experience! So, whether you're a full-time vegetarian or just looking to try something new and delicious, don't hesitate to grab some Impossible Beef Lite for your next batch of Big Mac Smash Tacos. You might just surprise yourself with how much you love it!
