Making mini banana muffins today because I had 2 sad bananas on the counter 🍌😅
Used my Silicone Mini Muffin & Cupcake Pan with Carbon Steel Frame (24-cup) and they popped out SO easily.
They’re bite-sized, fluffy, and perfect for snacks, lunch boxes, or “just one more” moments.

I’ve tried many quick breakfast recipes for busy mornings, and these mini banana muffins have become a household favorite. What I love most is how the bite-sized muffins are perfectly portioned for kids, making them ideal for lunchboxes or a grab-and-go snack. Using a Silicone Mini Muffin & Cupcake Pan with a carbon steel frame, like the 24-cup BRONYPRO pan, really simplifies the baking process — the muffins slide out smoothly without sticking, making cleanup a breeze. One tip I found helpful is to ensure you don’t overmix the batter once the dry ingredients are added; this keeps the muffins fluffy and tender. Also, mashing the bananas until smooth is key to distributing natural sweetness evenly throughout each muffin. I’ve occasionally added a sprinkle of cinnamon or a handful of chocolate chips for added flavor, which kids absolutely love. This recipe is also a fantastic way to reduce food waste by rescuing overripe bananas. Instead of tossing those sad brown bananas, turn them into delicious snacks that are wholesome and satisfying. Plus, these mini muffins freeze well — I bake a big batch, freeze the extras, and grab them as needed for quick breakfasts or an afternoon treat. Overall, these mini banana muffins hit the spot for busy parents needing quick, nutritious, and kid-friendly snack options. Give it a try and save those bananas!
