20 cups water
5 slices ginger
1 onion

Steps:

2. Bring to a boil. Cook for 2 mins.
3. Discard the murky water.
4. Rinse and drain bones, scrubbing off any scum.
5. Wash the pot. Return the bones and add water, ginger, onion, and rice cooking wine.
6. Bring to a boil and skim off any scum.
7. Reduce heat to low, cover, and simmer for 12 hours. Add water if needed.
8. Strain the broth. Shred the meat and discard the bones.
9. Season with salt & pepper and serve immediately or cool to room temperature and refrigerate overnight. Remove solidified tallow if desired. Enjoy!
